Green Safaris is a responsible tourism operator that runs a collection of lodges in Zambia and Malawi, including Likoma Island’s Kaya Mawa Lodge. Sustainability and support for conservation & communities are engrained in all that they do, so we’re excited to share their latest initiative – a cookbook! Recipes come from the chefs across the lodges, fuelled by produce from their community gardens, and all proceeds support conservation & community projects.

At each of of the Green Safaris properties, they believe mealtime is a key part of your journey, and they’ve made sure that deliciousness is always on the menu.
Much of the produce comes from their community gardens, established and maintained by the GreenSafaris Conservation Foundation. This commitment to quality ensures that every meal not only nourishes but blows your tastebuds away.
From timeless classics to exciting new favourites, childhood staples and local delicacies, their chefs craft meals worth remembering. They work with what’s in season and what inspires them, contributing to the exciting dishes and flavours. While travelling between the properties, you’ll never be served the same dish twice.
