The Royal Livingstone Hotel by Anantara has launched two new dining experiences offering travellers the chance to enjoy Zambia’s natural beauty while sampling local flavours. The Gorge Picnic and Zambezi Dining Experience combine scenic locations with locally sourced cuisine.
The Gorge Picnic is hosted at Bobo Camp – an area with limited access in the Batoka Gorge. Guests arrive at the site via helicopter where they are greeted with a gourmet picnic. The menu includes dishes such as Zambezi River bream with ponzu dressing and beef boerewors in herb jus. The picnic is on a private beach with views of the Zambezi River, providing a quiet setting for celebrations or corporate events. After the picnic, guests enjoy a scenic flight with views of Victoria Falls, marking the end of the experience.
The Zambezi Dining Experience begins with an introduction to Zambian farming and gardening techniques in the hotel’s herb garden. The first course features tomato jelly with cured river bream, chikanda carpaccio and Zambian okra salad. From there, guests are transported to the river bank for the main course where a private chef serves Zambezi grilled bream with wilted spinach and tomato fondue.
The experience continues with a traditional meal of beef and nshima prepared without utensils and accompanied by stories about the Zambezi River. The evening concludes at a site overlooking Victoria Falls where guests are served desserts such as cassava cake and Mubuyu mousse.
Both experiences focus on connecting guests with Zambia’s landscapes and cultural heritage through local cuisine and storytelling.
